Lemon Meringue Pie Recipe

This lemon meringue pie recipe has been in the family since I can remember. It has been part of multiple annual festivities such as Christmas and Easter and on various birthdays throughout the year. It is delicious.

The original recipe comes from my sister São.
It takes a bit of work but I guarantee the result is very worthwhile.

Ingredientes

  1. FOR THE DOUGH
  2. 200g of flour
  3. 100g of butter
  4. 1 tablespoon sugar
  5. 1 tbsp vinegar
  6. 1 egg yolk
  1. FOR THE CREAM
  2. 2 egg yolks
  3. 1/2 cup of sugar
  4. 1 tablespoon maize starch (well filled)
  5. 1/2 cup of water
  6. 2dl of milk
  7. 1 lemon
  1. FOR THE MERENGUE
  2. 3 egg whites
  3. 90g of sugar

Method

  1. DOUGH
  2. Mix very well all ingredients
  3. Make a dough sphere and let it sit for 30 minutes
  4. Distribute the dough along the base of a pie pan and chop with a fork
  5. Bake it at medium temperature for 20 minutes
  1. CREAM
  2. Dissolve maize starch in 1/2 cup of water
  3. Mix all ingredients in a pan including the previously liquified maize starch
  4. Bring it to the stove, stirring until it thickens
  5. When the cream starts to boil, remove from the stove and pour the cream into the baked dough
  1. MERINGUE
  2. Put the egg whites and the sugar in a bowl
  3. Mix energetically for several minutes until it forms the meringue
  4. Arrange the meringue over the cream
  5. Sprinkle with sugar and bake in the oven until it gets some color
